Strawberry Parmesan Chicken (w/ a little bragging)

I'm sorry, but I am always proud of myself when I pull off a truly home cooked meal...all from scratch. It's hard sometimes w/ these two little people running around needing this or that. I love it when I accomplish it...cooking can be so fun when you have the time! My friend Terri and I met at Central Market w/ the kids to play and ended up shopping around the store. I absolutely love their produce, meat, cheese and frozen section (& the wine of course!). The store is inspiring w/ all the great foods everywhere.
Anyway, this is a perfect summer recipe...& so delicious!

Strawberry Parmesan Chicken
3 cups fresh strawberries cut up
2 tbsp. white wine vinegar
1/4 cup strawberry jam
sea salt & black pepper
6 skinless, boneless chicken breasts (I used the tenders b/c it's easier w/ the kids)
3 oz. Parmesan or white cheddar cheese
6 large fresh basil leaves (from Val's garden of course!)
1 tbsp. olive oil
2 cloves garlic, minced
snipped fresh basil (again from Val's garden)

1. heat oven to 400
2. combine strawberries, vinegar & jam in baking dish (I used a loaf pan), sprinkle w/ salt & pepper
3. In skillet, cook garlic & oil over medium heat for 30 seconds. Add chicken w/ basil leaves, cook until golden brown.
4. Transfer chicken to baking dish, lay pieces cheese over chicken, put in oven for 5 min.
5. Add baking dish w/ strawberries for 10-13 minutes or until berries are soft
Serve chicken w/ melted strawberries, sprinkle w/ basil

  2. Ok...this looks amazing. I never thought to make a hot dish with chicken and strawberries. Thanks for the recipe...I still want your taco cupcake recipe!
